Our company was born on a sunny, but brisk day in November 2008, when Jason Miller and Michael Mercer opened the original Wine Kitchen in Historic Downtown Leesburg, Virginia. The initial concept was to open a wine store. Over time this evolved into a full-service seasonal restaurant. The Wine Kitchen is a unique place serving local food in an elegant yet simple manner. And while it may be more than a wine store, all our locations still offer retail wine to-go. Bottles are offered off premise at a $20 discount. If a bottle of wine is $35 of the menu, a guest can take it home for $15. A variety of other retail items are available to guests at all our locations.
Our second restaurant, the Wine Kitchen on the Creek opened in October 2011 in Fredrick, Maryland along Carroll Creek Linear Park. This restaurant focuses on a seasonal menu built around the idea of a modern, farm fresh steakhouse.
We opened a third location, WK Hearth in Purcellville, Virginia in 2013. After 5 great years we made the difficult decision to close its doors and try our hand at a new endeavor. We then opened our third restaurant, Maxwell’s, to offer a handcrafted “to-go” restaurant in downtown Fredrick that takes a fresh approach on the classic American duo of burgers and shakes.
We are always looking for neighborhoods where we can make a home and build a kitchen. We want to try new ideas and designs, think outside the box and create experiences that our guests, and our colleagues won’t get anywhere else. Though the concepts may vary, our guests receive the same level of honest hospitality and service regardless of if they are there for snacks, a five - course dinners or just drinks. The locations are unique, but the core is consistent - we feature all that is good and simple about food and drink and specialize in what is great about sharing them together with friends and family.
Our mission is to search out the highest quality, freshest, most delicious ingredients, and offer them in their most honest form.
We find outstanding wines that are true representations of their place and variety and pour them for our guests. We craft seasonal and intentional cocktails that tell a story.
The Leesburg location is inside of a building that dates back to the 1830s. During its lifetime, the building that houses our location has been a brothel, five and dime, part of Leesburg Restaurant and before us, a tearoom. The exposed brick along the front of the restaurant is original to the space. We found old envelopes stuffed inside the mortar between the bricks. Sadly, no treasure maps inside though. The tables in the Leesburg location were built out of wood pulled out of an old row house in Frederick, MD. The original design and artwork was done by Jason’s sister and then the interior was redesigned by local artist and decorator Amy Walton. We feature local artist installations monthly.
Our restaurants are designed to be warm and inviting like the kitchen of a friend’s home. Our restaurant designs create vibrant lived-in spaces that feel welcoming and are eco-friendly; incorporating vintage salvaged wood and other materials that are kind on the environment.
When we built the Fredrick location of the Wine Kitchen, nearly 90% of the construction debris was reused or recycled and diverted from landfills. All contractors and labor were hired locally. All materials were either recovered locally or sourced through local vendors. The fireplace mantel is reclaimed American chestnut which is now extinct. The vertical barn wood is pine and poplar reclaimed from Charlie Keller’s (1916-1990) ‘Yankeeland Farm.’ Charlie was a Frederick native and former New York Yankee(can you find the hidden clue to this?)
The fireplace brick was reclaimed from a 4-story building built in 1817 in Loysville, PA. The Carpet by Flor is made up of 88% post industrial and consumer recycled content which produces no VOC’s for superior indoor air quality. Our counter tops are made from concrete and the pre-cast aggregate consists of broken wine and beer bottles salvaged from local restaurants and wineries. Our Fredrick toilets and water faucets are low flow, water saving, Energy Star Certified.
Maxwell’s is in a historic building in the historic Downtown of Frederick, MD. A building has been on our corner of Maxwell Alley and E Patrick street since 1753. The current building was built in 1925 as offices for “New Citizen Newspaper." We took over the empty restaurant space after a previous business closed. While we inherited the layout and structure of the space, we worked with Zoltan Design (Frederick, MD) to give new life to the space. We also work with a rotating selection of local artists who display their art on our walls
Paulie’s was started as a “ghost kitchen” concept during the turbulent year of 2020. After finding our restaurant industry in uncharted territory, and unable to host as many guests inside, we decided to bring a new kind of ‘in-house’ dining experience to you at home.
Paulie’s continues to operate as a carry-out, and delivery concept from our Leesburg WK. The menu features family favorite Jersey-style Italian dishes with fresh, homemade pasta. Paulie’s will also operate as a mobile pasta cart.
